TUESDAY RECIPE: A BUDGETTED BREAKFAST: EGG MUFFINS

It can be nearly impossible to find time to eat breakfast in the morning. Between classes, hitting the gym, or attending a group meeting, on-the-go foods are a necessity. Not only do most college students not have time for the pancake-and-egg breakfast so typically shown in commercials, students need things that fit into their backpack and their hand. Queue egg muffins. Once you get past the fact that-yes, you are actually eating an egg in the shape of a muffin, these delicious pockets of joy become a healthy and easy must have.

Ingredients
½ Of A Green Pepper, Diced (DH)
1 Handful Fresh Spinach, Chopped (DH)
3 Eggs
1-2 Tablespoons of Milk (DH)
1-2 Tablespoons of Shredded Cheese (player’s choice, I go with swiss) (DH)
++++Optional additions can be made of spices (like garlic powder, salt, pepper, or curry), bacon or sausage chunks, and anything that goes in an omelet+++++

Directions
1. Preheat oven to 350 degrees.
2. Mix all ingredients into a small bowl (if you include meat, these need to be cooked ahead of time).
3. Pour mixture into a muffin tin.
4. Bake for 20-0 minutes.
5. Devour them.
