As you walk into Ontario Orchards you begin to smell the refreshing aroma of some of your favorite vegetables. The scent is so overpowering that you begin to taste the savory flavors in your mouth. You start to imagine what you could make when you go home. Ideas suddenly pop up and you are already preparing red onion and cilantro in your head. You begin to grab your vegetables and picture more. Thin slices of cucumbers, delectable cherry red tomatoes, and ripe avocados. Balanced with zesty salt and pepper, extra virgin olive oil, and the juice of freshly squeezed lemon. The combination of all of this induces a mouth-watering effect and you can’t wait to get home to taste the flavor filled crunch of your first bite.

      A garden fresh vegetable salad. It is light, easy, and accessible. The dining hall can provide some of these key ingredients! But, a visit to the local farmer’s market or Ontario Orchards might be an excellent choice for a fresh supply of vegetables. Feel free to substitute in vegetables that you enjoy the most!


3 Red Tomatoes

2 Avocados

1 Cucumber

½ Red Onion

¼ Cup of Cilantro

1 Lemon

2 Tbsp. Olive Oil

Salt and Pepper


  1.     Cut up the garden fresh vegetables you picked out: Tomatoes, avocados, cucumber, cilantro, and red onion.

(If you’re in the dining hall, the vegetables are already cut up. Grab a dining hall cup and fill it to the brim to bring it back with you!)

  1. Throw all the vegetables into a large bowl.
  2. Pour in the olive oil, add the salt and pepper, and lastly squeeze the savory juice of the lemon.
