Tuesday Recipe: HEALTHY Soup Time!

Winter is in full force at Oswego: cold nights, icy sidewalks and the never-ending wind. It seems to us that we could use something to keep our spirits up and get us through the cold. So what better way to warm up than with a warm, healthy soup?? This recipe is super easy to make and yields 4 servings.



1 tsp vegetable oil

1 onion, diced

1 carrot sliced

4 cups vegetable broth

1 cup dry lentils

1/4 tsp pepper

1/4 tsp dried thyme

2 bay leaves

Dash of salt

1 tbsp. lemon juice



  • In a large pot, heat up the vegetable oil and sauté the onions and carrot, 3-5 minutes. Stir occasionally until the onion turns clear
  • Add the vegetable broth, lentils, pepper, thyme, bay leaves and salt.
  • Bring to a boil then reduce heat to a simmer. Cover and cook about 45 minutes or until the lentils are soft. Take out the bay leaves and stir in the lemon juice before serving.
