TUESDAY RECIPE: PUMPKIN PIE POPCORN
Believe it or not, Thanksgiving is just around the corner! If you’re like me, you are ready for a break from classes and even more ready to eat some pumpkin pie. Actual pumpkin pie will have to wait another couple of weeks, but this easy recipe should be able to tide us over. This recipe would be a great option for a snack in the middle of the day.
Ingredients – Serves 2
2 Tbsp un-popped popcorn
1 Tbsp honey/agave
*Pumpkin pie spice
*If you don’t have pumpkin pie spice, try making your own by mixing up 2 tsp cinnamon, 2 tsp nutmeg, 2 tsp ginger and 1.5 tsp ginger.
You will also need:
Small paper bag or Ziploc bag
Microwave safe bowl
Put the popcorn kernels in the paper bag and seal it with tape. 2 minutes on high in the microwave should be plenty of time for it to pop.
Carefully take the popcorn bag out, open it and pour the popcorn into a bowl.
Take the honey or agave and pour it over the popcorn. It might help to heat it up in a small bowl for 15 seconds in the microwave.
Sprinkle the pumpkin pie spice over the popcorn. Add in the dried cranberries and assorted nuts.
Mix it around and enjoy!
