TUESDAY RECIPE: SUPERFOOD BLUEBERRY SALSA
Recently, super foods have made a pretty big buzz in the media. These types of foods are supposed to be beneficial for your daily lives and are very naturally rich with nutrients. Some examples of common super foods include dark leafy greens like kale and spinach; salmon; and blueberries.
The healthy recipe below is a twist on a popular snack that will make you rethink how you eat salsa.
If you are like me, a staple snack food is chips and dip. With this blueberry Salsa recipe that is both sweet and spicy, you can feel like you are taking a dip on the wild side of salsa. The blueberries give you a sweet surprise with its taste profile, while the jalapeños pack a punch with the heat. This salsa will be the next big dip that goes well with your tortilla chips. This salsa doesn’t even necessarily need to be just for chips, it also compliments grilled fish, chicken and pork. The blueberries are considered a super food because they contain antioxidants that fight free radicals in your body.
1 Cup of Fresh Blueberries
½ of a Red Bell Pepper
2 Tablespoons of Minced Cilantro
2 Green Onions
½ of the Juice of a Lime
¼ Tablespoon of Salt
A Pinch of Sugar
A Dash of Hot Sauce (Optional For Additional Heat)
- Coarsely chop the blueberries.
- Deseed and mince the peppers.
- Finely chop the green onions.
- After cutting up all of the ingredients combine them in a medium bowl and mix them together.
- Cover and refrigerate for 30 minutes so that the ingredients can meld together.
- Uncover and enjoy with chips!
(The salsa will keep in the fridge for up to 3 days)
